Coat your meat in the paste. Rest it for at least 30 minutes — longer if you have the time.
Parboil your rice, then layer it over the marinated meat in a heavy-bottomed pot.
Seal the lid, drop the heat low, and let it steam for 20–25 minutes undisturbed.
